Problem is home baking is just so tempting if I bake it I have to eat it so since the kids left home I bake very little and especially in lockdown.....i will bake again when they come for here for get togethers probably Lemon Drizzle cake which is a favourite.

I am currently baking a couple of boiled cakes in the oven and the smell is lovely.

Isn't that smell lovely indeed LT. Even nicer is when you open the oven door to fully release that lovely smell and see your cake[s] have risen perfecty.

hi bruce they look nice,must admit i do like to make a nice carrot cake..

must admit not heard of boiled cakes before

Will post recipe soon, Cakeman. It is delicious with butter and can also be toasted.

Boiled Cake

250ml (8 fl oz) water
900g (2 lb) dried mixed fruit
225g (8 oz) caster sugar
170g (6 oz) butter
230g (8 oz) plain flour
1 teaspoon bicarbonate of soda
1 teaspoon of mixed spice
2 eggs, beaten

Preheat the oven to 150 C / Gas mark 2.
Grease a 900g (2 lb) loaf tin, and line with baking parchment.
Combine the water, dried fruit, sugar and butter in a saucepan over medium heat. Bring to the boil, stirring occasionally, and boil gently for about 10 minutes.
Sift the flour, bicarbonate of soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended.
Mix in the eggs.
Pour into the greased loaf tin.Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean.
Cool cake in the tin for at least 10 minutes before removing.

L T. I bake these fruit loaves often, they are so easy to bake and turn out
very well , I use soft brown sugar . My daughter doesn't eat eggs, so I found a recipe for an eggless chocolate sponge, it's very nice and it stays soft and moist .
