Buzzie, I use the 16 ounce can but depending on the servings, it can be a smaller can. With just three of us at mealtime with this recipe, it had leftovers.

I used to serve the remaining portions of this dish for lunch the next day.

Chichen en Papillote

4 boneless, skinless chicken breast halves (about 1 pound)
pinch salt
Pinch freshly ground black pepper
2 scallions, chopped
1 medium carrot, sliced diagonally
1 small zucchini, cut lengthwise in half, then crosswise into 1/2 pieces
1 teaspoon dried tarragon
1/2 teaspoon grated orange zest

Preheat oven to 400 F. (424 F. if foil is used) Cut four 2 foot lenght of parchment paper or foil. Fold each in half to make a 1 foot square. Sprinkle the chichen breasts with salt and pepper. Place a breast slightly below the middle of each square of paper.

In a small bowl combine the scallions, carrot, zucchini, tarragon and orange zest. Spoon 1/4 of the vegetable mixture over each chicken breast.

Fold the parchment or foil over the chicken and crimp the edges together tightly. Bake for 20 minutes on a baking sheet.

To serve cut an X in the top of each packet with sciissors and tear to open.

That sounds nice Buzzie, will have to show OH as he is the main cook, I wonder if it will work with Quorn fillets instead.

I'm not sure that I know what Quorn is?

Sorry I missed this Denis. A skillet is NOT deep fry but reg. fry pan but you don't have to fry in it. It's just a nice size to work with this recipe.

Quorn is a vegetarian substitute, its fungus based and can be used instead of chicken.

I was looking a minute ago, much like mushroom. It might not take as long to cook, you can probably judge better since you have cooked both before.

Heart Healthy Recipe from Martha Stewart I have not used this recipe as yet but may this week end. Should have lots to freeze in portions after.

Vegetable Quiche Cups To Go

1 package (10 ounces) frozen chopped spinach
3/4 cup liquid egg substitute (heart healthy) or egg
3/4 shredded reduced-fat cheese
1/4 cup diced green bell peppers
1/4 cup diced onion
3 drops hot-pepper sauce 9(optional)

Microwave the spinach for 2 and 1/2 minutes on high. Drain the excess liquid.
Line a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.
combine the egg, cheese, peppers, onions, and spinach in a bowl, Mix well. Divide evenly amoung the muffin cups. Bake at 350 degrees F. for 20 minutes, until a knife inserted in the center comes out clean.

Quiche cups can be frozen and reheated in the microwave. Any veg and reduced fat cheese will work.
