Have you ever frozen eggs?
I have had loads of eggs lately. My daughters had some and l keep eating egg sandwiches with either cress, watercress or chives.
There’s only so many eggs you can eat, so l decided to freeze some of them..
l didn’t think it was possible to freeze eggs but l googled it and you can!
I didn’t freeze them in their shells! I whisked each egg slightly first then poured each into a greased muffin tin or deep patty tin.
l then placed the tin in the freezer. When the eggs were frozen, l removed them from the tin and placed the frozen eggs in a plastic container and returned them to the freezer.

I will use my eggs when defrosted for cakes or have them scrambled.

I've never frozen them but saw that tip on some website or other. Good idea. I can remember during the war my mother used to dip eggs in isingglass (I think) and they were stored in a deep bowl/basin in the corner of the dining room.

I take it you mean, raw eggs in their shells? Not boiled?

I’m sure a friend of mine, a Domestic Science teacher, used isinglass in chocolate mousse years ago.
