Red salmon & watercress rissotto

Ingredients , for 2 people

Arborio rice....I expresso coffee cup per person ( you can get this rice at most supermarkets)
Tin of red salmon ....about 210 grams will make enough for 2
1 bunch of fresh watercress roughly chopped .... use as much as you like
I tablespoon of marscapone cheese ..... any other cream cheese like Philadelphia is fine.
I small onion finely chopped.
half a litre of hot fish stock ( I use Knorr but any will do).... you can use a glass of white wine too and reduce the stock by the same amount
1 good tablespoon of olive oil.

Method

Flake the salmon and keep to one side.
Put the oil in a saucepan with the onion until it is soft but not brown & then stir in the rice so it is coated by the oil.
If using wine add to the pan and cook slowly till it is absorbed. Then add the stock a ladle at a time till absorbed but not dry.
Cook for around 20 mins stirring often until the rice is soft and looks like it is in a creamy thick sauce. season to taste.
Stir in the salmon flakes & the cream cheese & then add the watercress.

I serve it in warm bowls ( and sometimes eat it with a spoon)
Adjust the measures if you have more or less than 2 to feed.

...sounds nice. I like the risotto concept, getting flavours into the rice.

That sounds nice Twink and I think it would work well with Sewin which is a nice firm fish and being wild preferable to farmed salmon

Never tried it with fresh salmon, but if the fish is tasty it should be fine.
Risotto is so easy you can pour lots of things into it. So far I have tried
Prawns & sweet green peppers
Chicken & porcini mushrooms
Smoked haddock, peas & chopped hard boiled eggs

and I currently have ideas on creating one with bacon & tomatoes, where the cheese will make it like a creamy sauce.

If anybody wants to try these let me know & i will let you have the method & ingredients!
