I really enjoy a good rice pudding now and then Art....I use my mom's recipe doing it in the oven with a crispy top......
Served warm with a glob of whipped cream or ice cream on top.
I always put raisons in it as well, but I soak/boil them first to get them all big and plump.
In case anyone wants this recipe, I will put it here...
Butter baking dish.
Wash the rice and put one cup in the buttered dish.
Put in 1 cup of water and one cup of whole milk (it has to be the whole milk or it doesn't turn out so well with skim.
Put in oven at about 350 for 1 hour or til all the juice is gone.
Take out for a few minutes, while beating up an egg with a fork, with 1 tbsp sugar and a cap of vanilla.
Add it to the rice and a handful of raisons.
Fill up to the top with milk.
Put dabs of butter on top (to make it crispy).
Back in the oven for about another hour
If not crispy enough to suit you, put the broiler on for a few minutes...won't take long.
