Re: Southern Cornbread

Hi

No offence Surfermom, but deep south cornbread is no good as a fishing bait, it comes off the hook too easily.

The fluffy light version, mixed to a paste with a can of tuna in oil is ace.

The locals at Saratoga pier were amazed when Guy and Holly used it, they where only 7 and 5 years old, but caught loads, fishing it on a bobber 3 foot deep.

Judd, how much is a cup in ounces, or if you must, in grams?

Edit: I've just looked it up, I think it's about 8oz, does that sound right?

8oz is about right but I bought myself a set of stainless steel measuring cups to make life easier when using US recipes. Cheap too (the Yorkshireman's favourite word )

More of a cake than bread Summer. This one is an absolute doddle to make.

Re: Southern Cornbread

If you can't get buttermilk, replace a third of the milk with plain natural yoghurt and whisk together until smooth.

1 x cup is 8fl oz but flour and suchlike is only around 4 1/2oz for the same volume so use volumes rather than weights or use the 4 1/2 oz (125gm) weight measurement per cup used in the recipe.

Incidentally, that's how I make my Yorkshire puds - 1 beaker of flour to 1 beaker of s.s. milk beaten together with 2 eggs.

That works out at approx:

8oz milk
4 oz flour
4 oz eggs

Simples (as they say)
