Saag Chana Masala - serves four
Low calorie cooking spray
1 onion chopped
3 garlic cloves, finely chopped
2 tbsp grated fresh ginger
2 tbsp mild curry powder
1 tsp crushed fennel seeds
1 tsp garam masala
1 tsp ground cumin
1 tsp chilli powder
2 x 400g cans chopped tomatoes
2 x 400g chickpeas drained and rinsed
200g spinach
Juice of 1 lime plus extra wedges to serve
Salt and freshly ground black pepper
Spray a large pan with cooking spray and place over a medium - high heat
Add onion and cook for 5 - 7 minutes until lightly browned.
Add garlic, ginger and cook for about 30 seconds until fragrant, then add the curry powder, fennel seeds, garam masala, cumin and chilli powder.
Toss together for about a minute.
Add the tomatoes and chickpeas and mix well.
Cover the pan and bring to a boil.
Reduce the heat and simmer gently, stirring occasionally for about 10 minutes. Stir in the spinach, simmer uncovered for a further 5 minutes, then add the lime juice and check seasoning.
Serve with lime wedges.
I served mine with Basmati rice too.
