Artangel - your fish and chips look delicious. I make my batter with Guinness and cut my chips with a sharp knife. Some of those mechanical chip makers look lethal!

Art I am inspired to make this for the end of the week. But I'm now wavering between spring water and beer. Beer is winning but I am not sure which is best. Can you make batter with lager? Must it be guinness?

Absolutely, lager is fine. Beer battered fish is an institution here.

Annie, Again, Apologies as l’ve only just seen your post.

I thought it was the fizz that was needed to make the batter bubbly.
In the past, l have used plain flour with salt added, mixed with baking powder and water.

I used that recipe to make onion rings. Honestly, they were gorgeous! You also ended up with ‘scratchings’ like you used to get from the fish and chip shop!

Apologies, to you also Sarah.

This is the recipe l got from the tv programme at the time. I think you can find it on ‘This Morning’ website recipes. I just adjusted the amounts as the recipe was for four fish....

440g Self Raising flour
680gm Soda water
I teaspoon of salt

To be honest I never use a recipe but here is one that seems OK

Ingredients:

Fish of your choice (boneless and skinless)

330ml of cold beer of your choice

220g (1 ½ cup) self raising flour

½ cup rice flour (or plain flour)

Salt and pepper to season

Vegetable oil for frying


Method:

1. Cut fish into even pieces to ensure cooking times will be consistent.

2. Make the beer batter by gently mixing the beer with self raising flour, salt and pepper in a bowl. Use a fork to mix and do not overwork the batter. Some lumps are OK.

3. Coat each piece of fish with rice/plain flour. This will give the batter something to attach too.

4. Dip each piece of fish into the batter and place in oil.

5. Cook until golden brown and then place on paper towel to absorb residual oil.

Serve with garden salad, chips and a few wedges of lemon.
