3-Ingredient Fruit Cake
3-Ingredient Fruit Cake.
1kg of Mixed Fruit
600ml (2.½ cups) of Chocolate Milk
2 Cups of Self-Raising Flour
(if you don’t fancy the Chocolate Milk, you can use black tea, Orange, Apple or Pineapple Juice (2.½ cups) or even shop bought Iced Coffee (2.½ cups) but the Chocolate Milk worked it’s magic honestly)
Place the fruit into a large mixing bowl, add the chocolate milk and stir to combine.
Cover the bowl with cling film tightly and refrigerate overnight.
When you are ready to proceed next day, Line a 20c (8 inch) preferably square cake tin with baking paper and preheat the oven to 160C (320F) or Fan Oven 150C (300F).Gas Mark 3.
Fold the flour through the fruit mixture and transfer it to the cake tin.
Bake for 2 hours then turn the oven off and LEAVE the cake in the oven for a further 30 minutes.
When you remove the cake from the oven, let it cool completely before cutting and serving it.
