Veggie /vegan recipes

Anyone got any good ones ?
Trying to give up meat .

Must be tasty ,simple and not too much preparation .
( I hate cooking)

Stuffed potatoes .
This sounds good it's not vegan it's veggie

Get a large potato bake .

When baked remove top third
Scoop out potato inners and top
Replace top in bottom of scooped potato to reinforce base

Mixture
The scooped out potato
Egg
A little milk or cream
Cheese
Brocalli tomatoes ( chopped )
Onion ( chopped)
Herbs etc
Anything else you feel like

Method
Mix it all up
Fill up empty potato
Sprinkle mozzarella cheese on top
Bake again for 10 minutes

Voila!

Falafel Burgers
I’ve made them very yummy .
Yes several ingredients but just put them all in the blender easy peasy you can change recipe to suit yourself. The BBC veggie recipes are excellent .

400g can chickpea, rinsed and drained
1 small red onion, roughly chopped
1 garlic clove, chopped
handful of flat-leaf parsley or curly parsley
1 tsp ground cumin
1 tsp ground coriander
1⁄2 tsp harissa paste or chilli powder
2 tbsp plain flour
2 tbsp sunflower oil
toasted pitta bread, to serve
200g tub tomato salsa, to serve
green salad, to serve
Method

Drain a 400g can chickpeas and pat dry with kitchen paper.
Tip into a food processor along with 1 small roughly chopped red onion, 1 garlic clove, handful of flat-leaf parsley, 1 tsp ground cumin, 1 tsp ground coriander, ½ tsp harissa paste or chillli powder, 2 tbsp plain flour and a little salt.
Blend until fairly smooth, then shape into four patties with your hands.
Heat 2 tbsp sunflower oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden.
Serve with toasted pitta bread, 200g tub tomato salsa and a green salad.

I am an 'almost vegetarian' and rarely eat meat.
I don't miss it all. In the summer a meal will consist of 3 or 4 different salads served with something like a cauliflower and broccoli cheese or red onion and goats cheese tarts. In the winter home made soup with different kinds of home made bread or vegetable curry/ chilli with brown rice.
Today I am having leek/celery/potato soup with home made olive bread rolls.

I've really simplified my veggie burgers these days, a portabello mushroom smothered in garlic butter and grilled makes the most wonderful burger yum


Also don't ignore some of the ready made veggie options in the supermarkets some of the sausages are really nice and tesco do a vegetable pie that I've never met anyone that didn't enjoy it.
