Cooking for one isn't difficult once you get used to it. I like cooking and I like to eat; when I make it myself I know what's in it and it's spiced and flavored to my taste. Not to say I don't buy some prepared things: Mama Lucia's Italian meatballs are better than I make, and I do buy pizza crusts and other things ...
fish are perfect for one: trout, salmon, swordfish...

Nero, my Dad, who hated fish, once was very happy when traveling for the Government many years ago; crossed the International Date Line in some way that Thursday became Saturday by meal time so he did not have to eat fish!
