I believe our genes and constitution play a significant part, but with things like being overweight and smoking can't they always be addressed to minimise damage in older age? There will be some people who have heart disease or strokes even if they maintain a healthy weight and do all the right things; others seem to "run the gauntlet" and will survive taking the risk.
I think the best thing we can do is maximise our chances - everything in moderation, I think, including exercise and activities which will wear out our joints. If we do that then, although "wear and tear" is inevitable as we age probably "what hand of cards" we are dealt kicks in and we can't do much about that.
