Roast Potatoes
The most important part of any roast is the potatoes in my opinion. The meal isn't ready until the potatoes are done. This is my idea of the perfect roast potato.
After par boiling, roughing the edges and roasting until almost ready; squash the potatoes slightly with a masher and grate cheddar cheese over them before returning to the oven for another 5-10 minutes. When ready, allow them to cool for a short while, the cheese goes all crispy and a bit chewy but they are lovely and soft inside.
