Ox liver I soak over night in milk.

Normally would we use lambs liver.
I roll the liver in black pepper and flour, and sear.
Caramelise the onions, then make a drop of Bisto, pour it into the onions add the liver and finish cooking.
Of course mashed potatos.

Arthur my friend, what did you do with the bacon??? - can't eat liver without a few rashers of bacon too - absolutely delicious!!!

Instead of normal mashed potato, peel and chop into small pieces: a parsnip, a slice of swede, a slice of Celeriac and a sweet potato. boil or steam them till softened. Place them in a basin with a large knob of butter and mash thoroughly. Serve with the liver and bacon .

I do love my liver & onions. I grew up with it every Saturday since we had to eat fish on Fridays. My mom cooked it, lightly floured, with lots of onions and pan gravy. That gravy was so strong and yummy I can still taste it. I actually used to take leftover cold liver sandwiches with the bread having a bit of gravy and ketchup to school on Mondays. We never wasted anything in our home. I love beef liver.
