Pheasant plucker

Early Xmas present - a brace of freshly shot pheasants in feather. I've left them to hang in the utility room for a while and I'll pluck and draw them next week. Hope there's not too much shot in them. The last hen bird I got was badly damaged, but I managed to make a decent game pie using it.

I skin pheasants nowadays, can't be bothered with plucking them.

I'm tempted to do that too, but I'm not sure if you can roast them successfully. If they're badly shot, I think I just might skin them and use them in pies.

Scrape the fat off the inside of the skin and spread over the bird adding plenty of streaky bacon and they will roast OK.
