Of course we do but this requires parmesan which is a hard cheese. Horses for courses

I agree, a little sprinkle of parmesan cheese over your cheddar, is something we do when making cauliflower cheese. I find it gives that cheese flavour a bit of a lift.

I could eat that now too.
