Try making Chinese fried rice. It takes a little bit of time but it is a good way to make your rice last longer AND to use odds and ends of vegetables.
How I make my fried rice.
I always cook my rice with a chicken bouillion cube. Set aside when cooked.
1 lg carrot, cut into small cubes
2 spring onions, chopped
1/4 cup of frozen peas, cooked
2 large fried eggs
3 pieces of bacon, fried and chopped
a few dashes of soy sauce
a dash or 2 of blk pepper
sesame seed oil (this is the real secret of GREAT fried rice)
par-boil carrots and peas, set aside
in large frying pan, add a bit of veg oil, toss in the chopped green onions, cook for 1 minute,
Add rice, and fry for a minute or so.
Add a very small amount of soy sauce. stir well.
Add the vegetables, bacon and eggs. stir
Sprinkle on the sesame seed oil just before serving.
Yummy stuff.

Thank you very much for this recipe Bakerman. I bought a load of Chinese ingredients a few weeks ago with the intention of doing some Chinese dishes, but when I went online to find a recipe for fried rice, there were just so many! I didn't know which one to go for as they are all so different. It's so nice to have a recipe for fried rice that is tried and tested so I will definitely be trying your recipe as it looks so delicious..
When you say soy sauce, do you mean dark soy or light soy sauce? as I read somewhere that using the wrong soy sauce in fried rice affects the taste. Also, can I please ask - when you say a bit of soy sauce... do you mean a half teaspoon? a full teaspoon?
Sorry to sound so dense but I don't want to put too much in and spoil the taste.

I don't think it makes much difference, light or dark.
As per the exact amount, I don't measure. Don't worry about it. Just use barely enough to VERY SLIGHTLY color the rice.
