I've never taken to pig's liver, much too strong a flavour for me...

Like most, I was put off liver for years after having the crap they gave you at school. Once you have the real thing you realise what you've missed.


Hands down, the very best liver, the most incredibly tasty liver is Venison. Just the best.

Not easy to come by. Find a good venison supplier and get whatever you can. Every part of this animal is delicious.

Venison kidneys and diced haunches make a great stew or filling for a pie, but the venison livers are simply exceptional.

Venison sausages made by a real butcher are superb.

As I have anemia and have tried three drugs with dire results, will be popping into butcher in Upper High St to see about Goose liver.... But will pick up some Pigs liver at the same time. Will ask him about Venison liver too.

Only ever made pate with chicken livers but Linda gave a recipe for them in either the slimming thread or the whats for dinner one which I shall be following up

Liver & bacon casserole is fabulous!!! - and you don't have to necessarily pre-fry it.

Wash it under a cold water tap, pat dry with kitchen roll, toss in (plain) flour and lay in a shallow oven tray. Slice an onion and place slices on top of liver. Lay strips of bacon over the liver. Make the gravy (Bisto powder & Oxo cubes) and pour over ingredients. Place in warm oven and cook at 180 oC for approx 45 - 60 mins.

Of the people who answered question 2) What type of liver is tastiest? The favourite seemed to be lambs. Pigs is less "mild" I gather.

Nobody, I take it, recognises my comment: It was bitty and often had "tubes" running through it. Disgusting stuff.
