I used to do lots of this, and do it manually, and became very good at it.
I then went on to do something more, erm, subtle where, instead of making the background contrasting black & white, just making it a little less sharp and less colour saturated. It really makes the subject stand out, but with no obvious editing.
Here's just one example ... a pic I took and posted on here a couple of weeks ago: the background people are unfocused, that's genuine lens shallow depth, but they are also slightly greyed and that's don't in post processing ... a subtle colour popping.
