Meringues

Meringues are my very favourite cakes but though I have probably tried to make my own at least fifty times they have
never been successful and always look like flat flying saucers.
My ambition is to make a perfect batch. Any tips?

Make sure your eggs are at room temperature, that your bowl is clean and add some cream of tartare to the whites at the start, the add the Sugar slowly before the whites are completely stiff. Last but not least, always use an electric mixer.

Mum always told me the most important thing is to make sure the bowl is grease and oil free , so always wash the bowl in hot water .

When I have made meringues in the past I only ever used egg white ( must be free of yolk and white bits) and caster sugar folded in gently .

Slowly slowly warmed in a cool /warm oven

CC can i ask what does the cream of tartar do ?

Hi Susan...

Cream of Tartar acts as a stabiliser. Some people use a drop of white vinegar or lemon juice but I find that CoT works the best.

The eggs should be really fresh, if they don't sink to a horizontal position in a glass of water forget it (the older they are the bigger the air bubble inside making then float).

Don't overbeat the whites, as soon as they look 'dry ' and a peak 'holds' itself stop beating and gently fold in the caster sugar

Mmmmmm meringues and fresh whipped double cream , especially when the meringues are chewy inside

Leave them in the oven overnight.
