Using Up Left-Over Christmas Pudding.

No photo sorry. but a great way to use up any left-over Christmas Pudding, which I guarantee I will have.

I snaffled this recipe from a website and the originator said it was gobbled up in no time. So will try it this Christmas holiday rather than bin it as I usually do. (I know, shame on me).

This is for a loaf tin cake and is quick and easy.

You will need;

10 oz of Self-Raising Flour
4 oz of Sugar
4 oz of Butter
1 teaspoon of Baking Powder
3 Eggs
Any left-over Christmas Pudding (broken up with a fork)
1 cup of black tea.

Grease a loaf tin, Mix all the ingredients together, place into tin and cook at 180 for 40 minutes.

If this comes out as nice as she says, I will be looking for reduced Christmas puddings to do this recipe again.

My Grandma (Irish one) used to fry any left over pud on St Stephen's day and serve it with cream

Errrmmm - what's left over Xmas pudding??? Don't get none of that down my way - the xmas pudding gets snaffled entirely, smothered in Brandy Sauce!!! - delicious

I buy the really big one but as it's mostly girls boxing day, I know they won't eat a lot of Christmas pudding after their rather heavy meal. I have a home-made Trifle as an alternatie so hopefully there will be some pud left over for me to try this cake.

Yep, fry it in a pan with butter and serve with cream. That is of course if there is any left overs
