It is also exactly what we are seeking with others.

Both those you mentioned have just signed FTA's with the EU and Japan's comes on stream on Feb 1. Canada's is already operating.
There is not ONE nation in the WTO which trades solely by WTO rules. They ALL have other bilateral deals they have negotiated.
In addition I don't think the discussions about UK quotas as part of EU quotas have been settled and until they are, your schedules will be the highest tariffs of all. Other nations will want to make you as uncompetitive as possible.
Now why would you want to leave a reconciliation panel like the ECJ where you have an equal voice and put yourself under a far larger panel where you have a far smaller voice?
and finally since the EU is all but self sufficient and can call upon supplies and sales to its own members plus 40 other nations with which they have an FTA plus others with special agreements, this assuring that they REALLY do not need you, how is this going to assure the bright new future you envisage?
You had better bloody hope you get an FTA with the EU.
