Use small whole potatoes. Peel them and steam them until they are soft a fair way through. Let them cool and dry them thoroughly with paper towels and set them aside. Put equal parts plain and self raising flour in a big bowl - say 1 cup of each - and mix them up thoroughly. Add some salt/ garlic salt to suit yourself. This is optional. Also I like to add just a little shake of caster sugar as well. This is also optional. Mix all this together then drop the potatoes in. Roll them around and leave them in the bowl with the flour for a while. Roll them around in 10 minute intervals for about half an hour until the flour is a little gluggy on them. Put some rice bran oil in a pot and deep fry the potatoes careful not to burn them. When they are crispy and golden test with a skewer that they are tender all through. If not let them fry longer on low heat. Let them drain thoroughly. They are great with sour cream and sweet chilli sauce and/or chives.
