bake potatoes as normal.
As potatoes are baking, fry some bacon strips, when cool crumble them.
When cool enough to handle, make a smallish cut in potato skins and scoop out the potato and put the insides into a small bowl. be careful to not rip the skin.
add crispy bacon to potatoes
Add either melted butter or sour cream
Add shredded cheddar cheese.
Stir until well combined and refill potato skins,
Pop back in oven to reheat and lightly brown top.
A really yummy treat to go with main meat entrée
Not a big eater ? You also have the option of slicing the baked potato in half and proceed as above.
