I wandered to the fridge in search of left-over inspiration..
Fried finely chopped red onion (half)
Added long grain rice
Allowed to simmer covered in white wine stock for 20 minutes
Added defrosted peas and cubes of half fat feta at the end
And then chucked some coriander leaves on (because they're on their last legs)
I nearly squeezed lemon on to but it was tasty enough
Yum
And I only needed half so I can freeze the other portion too!
