The eggs should be at room temperature, placed in simmering not boiling water and left for four minutes. Boiling water can make the shell crack.

4 minutes wouldn't be long enough for the eggs we are using at the moment, 6 minutes is just right. Cracked ones the dogs get so they would be upset if I didn't have a few failures.
