Too many Toematers

Tomatoes for the translation.

I have a whole pile of tomatoes in the fridge.. What do you do with them? I'm thinking of spaghetti sauce and perhaps a big bowl of salsa.

Take the recipe for tarte tatin and make it using tomatoes found a recipe that is very close to the one I have made http://www.bonappetit.com/recipe/tomato-tarte-tatin delish !!

I have often purchased really ripe tomatoes at a really cheap price, then bagged them up and bunged in the freezer. You end up with a bag of 'billiard balls' but, and here's the magic, when you need a good tomato based sauce for bolognese or chilli say, then take out as many as you need, drop into hot water for a few seconds (the skins will then simply slide off) cut each one in half, scoop out seeds and chop the flesh up. Believe it or not they are incredibly easy to chop in a frozen state, and the flesh almost dissolves into the sauce.

Alternatively make chutney, although this is usually preferable using them whilst green.
