I've found that baby carrots have a tendency to be rubbery when frozen.
But I've never had a problem with the bigger carrots.
I wonder if it is the type of carrot?

I doubt it,many supermarkets sell frozen carrots although they're not to my liking as they don't have much flavour

Yes darlin' - Iceland supermarket used to sell carrot and swede mis - they make a delightful mash, but since they've now stopped selling it here in Brighton, I tend to make my own. What does make a really nice mash - sweet potato, parsnips and celeriac together. I use it with Haggis - fabulous!!!

I often cook carrot & turnip or swede together. Always fresh - I despair at the proliferation of 'pre-prepared / cooked ' veges. (I'll make an exception for garden peas)

There is a north/south debate as to what constitutes a swede or a turnip.
I prefer turnips (depending on variety) which I think has a better flavour.
We grow a variety of carrots called 'Eskimo' which last well in the ground and have a good flavour, not like the orange coloured, tasteless things that some supermarkets sell.

If you haven't tried it, cook & mash some carrots and turnips seasoned with butter, salt & pepper.

I agree with you there - cannot beat proper fresh veg !

I have always believed that the white ones were turnips and the yellow ones were swedes. Is that right ?

That's what I've always thought also. Turnips are also smaller.

I love a swede and spud mash with bangers in a thick onion gravy, or a quickie meal, swede and spud mash with a thick onion gravy which has been made using the veggie water, and while mash is being prepared and served, place slices of corned beef onto the top of the gravy, stir in, and pour onto the mash. Childhood favourite and still is to this day.
