Battered deep fried fish
I am always looking for a better recipe on many of my foods. Seems like my tastes change as I get older.
Currently, I'm interested in improving my recipe/method of doing a deep fried cod.
What recommendations do people have ?
Do you use a club soda in the batter ? Beer ? Egg ? Rice flour?
if you go to a fish and chips place to buy take out, is the coating on the fish soggy by the time you get home.
I really want a light, very crispy batter on my deep fried cod.

I would have thought beer was absolutely essential in batter for fish.

Hey BM. Bruce is right. Beer is good for batter. This is my go to batter brew.
It works for me.
2 tablespoons of plain flour
1 tablespoon of cornflour/ cornstarch
1 tablespoon of tempura mix. (Or you can just use two tablespoons of cornstarch flour)
1 teaspoon of baking powder
pinch of salt
ice cold water or beer if you want.
I always coat the fish or whatever in flour before the batter.

Keezoy - that is the recipe I use as well - with one change - I use Guinness!

Hi
Tempura batter s the way to go, it stops the fish getting soaked in oil and the batter itself absorbs very little fat.
You can serve the fish on kitchen roll which is what they do in some places abroad to show the lack of fat.

Ms d00d likes deep fried battered fish.
She eats the fish but not the batter.
We pan fry fish at home ... a little olive oil, add fish (dried with paper towel) salt & pepper and put the lid on.
You just need one of these. Nearly all our food is done in a pan like that.
