Guilt Free Home-Made Fish Sticks (suitable for Vegetarians)
Hi everyone. went to my perfect, nothing-ever-goes-wrong-when-she-cooks SIL for lunch today. (vegetarian)
Love her really!
She already had the recipe written out for me as she knows I like to share with you on here.
Flippin heck, they were soooo nice, she served them with oven chips and low-fat home-made tartar sauce.
Hope you try them. she says they are so easy to do. This recipe is enough for two.
I searched online for these and sure enough. found them, hence was able to include a photo.
So here are the following nutritional facts if you need them:
1/2 cup Breadcrumbs (45grams 1.6oz)
1/2 teaspoon Salt
1/2 teaspoon Paprika
1/2 teaspoon Schwartz lemon-pepper seasoning
1/2 cup plain flour (62.5grams 2.20oz)
1 x large Egg, beaten
3/4 pound Cod Fillets, cut into 1-inch strips
Butter-flavoured cooking spray (if not on a diet, real butter)
METHOD.
Preheat your oven to 400F / 200C / Gas 6 / Fan 180C.
In a shallow bowl, mix the breadcrumbs and all seasonings together.
In two other shallow bowls, have your beaten egg in one, and flour in the other.
Dip your fish slices on both sides in flour first, shaking off any excess flour.
Dip your fish slices in the egg, then the breadcrumbs, patting them to make sure the breadcrumbs stick.
Place on a baking sheet coated with cooking spray (or butter)
Spritz with the butter flavoured spray (or brush ever so gently with butter)
Bake for 10-12 minutes or until fish starts to flake, turning once during cooking time.
