Beetroot

anyone like them? - reputed to be a good blood pressure lowering fruit/vegetable.

came across this the other day and just about to try it:

beetroot plus salt plus boil
2 soft boiled eggs - can be boiled with beet

make a dressing of cider vinegar; english mustard;third teaspoon of sugar, pinch of salt, olive oil and clove of garlic - amounts as you feel and mix it as you want - I whisked mine to break up the mustard.

Pour over cooked beetroot, stir soft boiled eggs [obviously sliced?] through beetroot - I assume beetroot can be sliced ] and lay anchovies overtop and top with fresh chives - sounds divine!

well tried and tested - an interesting way to eat boiled beetroot if you find it boring on its own. going a bit easy on the sauce and anchovies might help - anchovies are notoriously salty - fresh chives added a nice clean flavor - worth a try.

With regard to blood pressure salt is a real no no isn't it? Probably negating any effect the beetroot has to lower it somewhat. Sounds like a nice way to eat beetroot but not too sure it is all that healthy for you if you overdo the salt side of things.

Never had them raw Barry I like them sliced between two slices of bread and butter with lashings of salad cream (not mayo)

Simply boiled and mashed with potatoes is nice too. Not sure I would eat all that salt in the original recipe.

Not a fan of beetroot, they remind my of parsnips which I don't like either, they are both sweet tasting.
