I love pickled beets and have been known to snaffle a couple of the teeny tiny ones when getting something else from the 'fridge. Really like them with corned beef, either in a salad or just with slices of the meat and mashed spuds (think that may have been a school dinner that has lingered).

Wrapped in foil and roasted while you have the oven on for something else and then drizzled with balsamic vinegar.

Urrgh!! beetroot - makes me shudder - When we had school dinners I always dreaded the awful smell of boiling beetroot seeping through the corridors. It used to be served hot at lunch time with mashed potatoes. I went hungry on beetroot days.

Just boiled and no vinegar, is my favourite way to eat them!
My favourite two veggies beetroot and parsnips very yummy.

I like washed, unpeeled beetroot brushed with olive oil and salt, and roasted. Can't stand it any other way though and I detest that awful pickled concoction that I remember from childhood.
