Apple and Cinnamon Cake
Here is the recipe that I mentioned in the "Date" thread.
Its from Mary Berry's 100 Cakes and Bakes book which I can thoroughly recommend.
Apple and Cinnamon Cake
Cake tin - a 9" round (I used an 8x10 rectagular one)
8 oz butter, softened (I used Stork in the tub)
8 oz light muscovado sugar
3 large eggs
4 oz chopped walnuts
4 oz sultanas
8 oz s r flour
2 level tsp of baking powder
14oz of grated cooking apples (I used leftover apples from the fruit bowl)
1 level teaspoon of cinnamon (I used about 3 ! )
Topping
light muscovado sugar for sprinkling (I've used demerara today)
extra chopped walnuts for sprinkling
Preheat oven to 180C/Fan 160/Gas 4. Grease and line tin.
Measure butter, sugar, eggs, chopped walnuts, sultanas, flour and baking powder into a large bowl and beat for about 2 mins until thoroughly blended.
Spoon half mixture into tin and spread prepared grated apple and cinnamon in an even layer over the top. Spoon remaining mixture on top, level and sprinkle generously with the muscovado sugar and walnuts.
Bake for 1 1/4 to 1 1/2 hours until well risen and golden brown. Leave to cool in tin for few minutes before turning onto a cooling rack.
I found 1 hour was enough in the oven. Plus, as I said in the Date thread, today I added soaked dates with the apples.
