They say that a way to a man`s heart is through his stomach-maybe.

I taught myself to cook as a poor student knowing that a meal prepared with care has two advantages,

1-it will taste good and not cost an arm and a leg

2-She is already in your room while you go to the shared kitchen.

Paella was my best as a student although curry came soon after.

Both need attention-slow melding of the flavours,care to ensure every grain of rice was ready.

I`ll not bore you with recipes-just a philosophy of cooking

I`m older now-but it remains the same.

Good quality rice,good stock to cook it in, as much saffron as you can afford.

Then it`s up to you-chicken,rabbit, some mussels??maybe some prawns?

It`s the rice and stock that matter-creamy but not `mush`-and yes that takes a bit of trying.

A Paella is named after the pan-but is it not just a risotto?

Can you just use home made vegetable stock (it's just water left over from my veg, which I often reuse so I bet it gets tasty lol).

How do you cook the chicken/prawns?

I need step-by-step instructions OG!

Can't eat mussels. Ever seen baby sparrows that have fallen out of their nests before they have feathers? They remind me of mussels. And prawns tread water outside sewage outlets with their mouths open.

Mussels marinara is a favorite with me, don't have any pics of it though, actually haven't taken any pics of dinner except for the minestrone soup that Nero asked about a while back, and have deleted it since.

I've never tried paella at home; that's a dish that's almost impossible to adapt to a single serving. Love it, though.

Tuscan bread soup, but don't think you'd like that, Azz, aren't tomatoes on your no-no list, as well as cheese?

I`m no teacher-books will teach you the basics-then you need your taste,smell and above all your heart to become a decent cook.

And I do say a decent cook as opposed to a wanabee chef-there is a huge difference

For Azz

Zuppa di brodo e pomidori (Bread Soup)

12 oz tin of good organic low sodium beef stock
pepper
rosemary leaves
garlic
good virgin olive oil
baguette
tomatoes
shredded mozzarella
oregano

Put the broth on to simmer with several grinds of pepper
Add olive oil to pan with the rosemary leaves and garlic
Slice 3 or 4 slices of baguette about 3/4" thick, add to the oil and fry till golden brown on each side. You may need to add more oil.
Add bread slices to broth (you might think they would disintegrate, but they don't).
Add coarsely chopped tomatoes to taste.
A pinch of oregano to add a bit more flavor, simmer will all ingredients are warm.
Add shredded mozzarella to top it off in the bowl.
