Magic Pie!

Grandma used to make this for us - it was fascinating! :-

Ingredients

4 eggs
4ozs butter
1 cup white sugar
1 cup desiccated coconut
1/4 cup plain flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon vanilla essence
2 cups milk.

Method

Put all the ingredients into a large bowl. Mix until well blended. Pour into a buttered pie dish. Bake in the middle of oven, Gas Mark 4, (350f or 175c) for about 1 hour.

When cooked - as if by magic - there will be a crust on the bottom, custard in the middle, and coconut on top. I don't know how it works - but it does!

Sorry - it is 350F, or 175c, thanks for pointing it out - have edited the recipe.
