We have just had Marinated Pork Chops with Roast Potatoes, Brussels, Parsnips, Peas and gravy.

Mother's Day, and my son cooked a roast chicken, roasties, stuffing, mashed swede and carrots, cauli and broc, with proper gravy, and truly scrumptious it was too! Made extra succulent because was cooked for me.

Tomorrow we will have a bubble and squeak made from left over veggies with added kale for flavour, and cold chicken. For pud a sort of experiment. The other week I bought a pineapple then forgot it, earlier today my son used our little gadget to core/slice it and we were going to have it after dinner, but forgot. So just had this idea; blind bake sweet pastry crust, then when cool line with quick gel, and arrange the pineapple slices on top (maybe with glacé cherries) then top off with cooled 'thick' birds custard. What do you all think?

Yes darlin' - sounds delightful, but might I venture to suggest: forget the glace' cherries but add some cocoanut flakes or sprinkle with ground cocoanut.
Pineapple and cocoanut go together like Gin & Tonic - can't have one without the other.

We are onto the salads now that the weather is a bit nicer, we had pork chops with salad last night and tonight we are having a nice ham salad as we are taking the cat to the vets and we will be running late.

My husband makes a lovely salad always makes it look lovely on the plate where as I just throw it on.
