There's two - the first is taste (I prefer the taste to the florets, though that's of course subjective) but secondly and more importantly, it's the nutritional value - which is concentrated in the florets - particularly chlorophyll.
Sounds like you are clutching at straws for a reason there Azz, and personally I think it's all wrong that you discard part of the vegetable at someone else's expense. Do you also take the skin and bones out of the meat and leave it on the shelf? Do you take the nuts out of the shells or the rind off the Edam and leave the residue in the shop? And as for anyone who snaps the thin ends off the carrots, as someone apparently does, I'm virtually speechless at the pettiness.
As far as I am concerned if you don't like something as it is then find a different piece or different vegetable by all means, but there is something morally wrong with adulterating an item because you don't want a small part of it.
