Leek and Potato Soup

This is a cheap and cheerful warm lunch and you probably have all the ingredients in the pantry.


Ingredients
3 medium sized leeks
3 medium sized potatoes
1 onion
garlic as much or as little as you prefer
herbs whatever your favourites maybe or a little curry powder
pepper
very good vegetable stock (Vegetable oxo will do)
olive oil

Directions

1 In a large saucepan put some olive oil and the cleaned and chopped vegetables, sweat them slowly for about 20 minutes until they are cooked.

2 Make up the stock, to how much soup you require and add to veg.

3 Cook a little longer, making sure the veg is all cooked.

4 Zap it all with a hand blender or food processor and check seasonings.

5 It shouldn't need salt as the stock especially a cube will be salty.

6 Eat with crusty bread and enjoy
