New England style Clam chowder

easy to make. serves 6-9 people

1.) 2 cups of chopped clams
2.) 2 cups of clam juice
3.) 2 cups of light cream (or half and half)
4.) 3 cups of waxy style potatoes, cut into 1/2 inch cubes
5.) 1/4 lb of bacon
6.) 1 1/2 cup chopped yellow onions
7.) 1/4 tsp ground thyme
8.) 1 large bay leaf
9.) 1 chicken bouillion cube
10.) 2 TBLSP butter
11.) 1 TBLSP dry sherry (optional)

saute bacon until crisp, crumble into small pieces and set aside.
Add butter and onions to the bacon fat and saute until a very light golden brown.
Add 3 cups water, thyme, bay leaf, chicken bouillion cube and crumbled bacon.
Bring to a gentle simmer and add cubed potatoes. simmer until potatoes are just barely tender.
Add chopped clams and clam juice. heat through.
Add light cream
add salt to taste. add white pepper to taste.
if using sherry add now.
Serve with a crusty chewy bread. Enjoy !

That sounds absolutely delicious, Bakerman. Have copied it into my recipe file. Not sure if we have fresh clams here - never seen them at the fishmongers.

Do they have a specific season?

Could I make it with frozen ones?

You do not need fresh clams. I am sure that you can get canned clams. They are just as good.I have not tried frozen clams but I think they would be fine.The clam juice usually comes in small bottles.
