I assume you don't frequent the spirits aisle. The bottles are fitted with a collar that A. prevents the bottle being opened and B. contains a RFid coil. This collar is removed when the bottle is purchased. If the collar isn't removed then the alarm sounds when it is carried through the detectors at the shop door. At this point the shoplifter starts running, having waited till the security guard was as far away in the shop as possible.
