Using Up Left-Over Christmas Pudding.
No photo sorry. but a great way to use up any left-over Christmas Pudding, which I guarantee I will have.
I snaffled this recipe from a website and the originator said it was gobbled up in no time. So will try it this Christmas holiday rather than bin it as I usually do. (I know, shame on me).
This is for a loaf tin cake and is quick and easy.
You will need;
10 oz of Self-Raising Flour
4 oz of Sugar
4 oz of Butter
1 teaspoon of Baking Powder
3 Eggs
Any left-over Christmas Pudding (broken up with a fork)
1 cup of black tea.
Grease a loaf tin, Mix all the ingredients together, place into tin and cook at 180 for 40 minutes.
If this comes out as nice as she says, I will be looking for reduced Christmas puddings to do this recipe again.
