Re: Kale

Hi

It needs to be cooked and drained because of the high level of oxalic acid in it.

Oxalic acid needs to bind with calcium to be excreted, so not good for old bones.

I eat it, I steam it and then just squeeze to get the water out.

The cooking water is full of oxalic acid, it is used by furniture restorers to get rid of ring marks and water stains.

In years gone by the cooking water was used to put a shine on marble.

Re: Kale

Thanks folks, gave it a go last night, steamed then finished in a pan with butter. I enjoyed it and will try the other suggestions as well.

Re: Kale

I cook it, but I don't like it very much.

I boil mine until soft, drain it, then with a small knob of butter fry it in the saucepan with salt & pepper, sometimes I even dice up a very small onion and cook it with it.

Re: Kale

I really like kale, as a healthy snack I put it on a baking tray spray it with a little olive oil and sprinkle with a little garlic place in pre heated oven until crisp, healthier than crisps and taste really good.

Re: Kale

Poison - its a Brassica which contains vitamin 'K'- not allowed any of the brassicas as they counteract the Warfarin I've been prescribed.

Re: Kale

I often use kale in a salad instead of lettuce, so yes Nom it can be eaten raw.
