why fresh herbs may not be the best additive?

try dry herbs over fresh?

I use dry herbs, but not all herbs taste the same when they are in powder form, like Mint and Parsley taste horrible when dried in Pots its better to buy them fresh, but other things like Spices are ok.

I agree - they taste dusty somehow.

To me the Mint and Parsley taste earthy, not like the real thing.

I buy fresh for Mint, Parsley, Chives, Thyme & Coriander.

I always use fresh, the most common ones that is, sage, thyme parsley etc, but there are some I can only get dry
