I like the idea of the mini meat loaf. I usually do mine as whole, and sprinkle dry stuffing mix on the top, before end of cooking time.

I love to bring an Ambrosia Salad...if going to a pot luck dinner or luncheon... It's light and fresh, especially for the summertime...

Hi susiejaeger...an Ambrosia Salad is more of a dessert.

1 cup of mini marshmallows

1 cup of mandarins, drained

1 cup of pineapple tidbits, drained

1 cup of shredded, sweetened coconut

1 cup of Maraschino cherries, drained

1 cup of sour cream

Combine everything together and if you've a sweet tooth, enjoy!
