That's so funny, susiejaeger...I am a terrible Type 2, insulin, dependent diabetic...needless to say, I only make this to take to gatherings...

Rather than have 'a salad' I like a selection of different little salads with a variety of dressings. Some are season dependant . I find it more interesting.

So I might have apple and celery/fennel and red onion/tomato and basil/new potato with chives/ and a green leafy salad (I like 'Steves Leaves' the one with pea shoots).

In the winter I substitute the potato salad with a pasta salad containing mushrooms/basil/olives/sun dried tomatoes,
or a spicy rice salad which has chopped carrots/mushrooms/peas/sweecorn/curry powder.

Yesterday for my salad, I had:

Rocket leaves, cucumber and red pepper diced, diced cajan chicken, cherry tomatoes, raw bean shoots, beetroot and one tablespoon of coleslaw.

It was good Tabs, I quite like Salads, whether its summer or winter. The only other things we eat are Chicken or Fish.

I have just stunk the Kitchen out with Smoked Haddock and I've got a Carpenter coming over at 3pm.

I love rocket! Over here, we call it arugula, at least in my part of the country.

Caprese salad is one of my favorites; sliced tomatoes, fresh basil leaves and sliced fresh mozzarella cheese, drizzled with extra virgin olive oil and your favorite vinegar.

I like to add "rocket", even though it's not the classic Caprese.
