Spicy Pork Pilaff

Spicy Pork Pilaff

[B]Ingredients:[B]

1 Lb diced pork
one and 1/4 Pts stock (I also add a 'curry' oxo cube too)
2 Oz Butter (don't be tempted to use oil - you'll need the flavour)
1 onion (peeled and SLICED
(frozen) mixed veg - defrosted
3 Tblsp Soy Sauce
1 mug full of long grain rice
Curry powder
Garam masala
Cumin

Method:

Melt butter in large frying pan, add onion and pork and fry for approx 5 mins. Scoop out with slotted spoon and place is slow cooker/casserole dish reserving as much of the melted butter ghee as possible in the frying pan. Add the rice to the pan and stir until rice has absorbed the butter. Add the stock, soy sauce and spices and bring to boil. Scoop out into the slow cooker/casserole dish and heat.
The rice will eventually absorb all the liquid, *** In a slow cooker this will take 2- 3 hours. when this happens, add the mixed veg and stir in. Return to heat for approx another 30 minutes. Voila!!! Spicy pork Pilaff. Bon Appetite everyone.
