I once knew someone who would do just that, feed the
dog morsels from their own plate, and then when they'd finished, would put their plate on the floor for the dog to lick. Ewwwwwww!

Yes, quite.
Ours does get some things that would be suitable for human consumption and added in small quantities to his dog food bowl. A few pieces of diced, boiled chicken breast. Now and again, plain boiled rice. And, most days, a raw carrot.

Oh yes. Bits of fat/gristle and remains of gravy etc. would get scraped into their bowls in the kitchen, of course, but never from plates or cutlery that humans used.

They loved the ends of raw carrots, and broccoli stems. They didn't like cauliflower stems, though.

We're quite careful about what Max gets. No fat, gristle, or gravy. We don't want him getting any heavier.

I just incorporated it into my dogs' total food allowance.

Well, you can see from the photographs that ours is no skinny mini. In fact, weighs a few kg more than is ideal even for his size.
