Beef with Barley and Mushrooms
This is a slow cooker recipe
for 4-6 people
3tbsp Olive oil
1kg Braising steak in chunks
450g onions thinly sliced
salt and pepper
boquet garni
700ml beef stock
225gms sliced carrots
2 celery sticks chopped
150g pearl barley
500g mushrooms sliced
1) Preheat slow cooker and whilst its heating, brown the beef, remove and set aside.
2) Add onions and salt and pepper and cook for 5 mins on low until browned. Return the beef to the pan and add boquet garni and more seasoning if required. Pour over stock, stir, and then add carrots, celery and barley.
Cook for 6-8 hours on low or 3-4 on high. Add mushrooms for the last 20 mintues of cooking.
3) Serve with crusty bread.
