Usually cut up in a fruit salad, we do have a lot of fruit salad, occasionally a banana sandwich, I always buy green bananas as they ripen very quickly and I use plantain (big green bananas) for making matoke, which is a nice change from mashed potatoes. Ones that go brown or mushy get thrown away, I can't stand mushy bananas.

Matoke isnīt a Jamaican dish sugarbug, itīs Kenyan and one I like very much indeed. If my memory doesnīt fail me I will give you the recipe tomorrow.

Here you are sugarbug.

Matoke

8 green bananas (the big plantains are best)
1 cup of water
pinch of salt
2 tablespoons margarine
2 tablespoons warm milk

Bring salted water to the boil, add the bananas (chopped), simmer for 30 minutes, or until soft, add margarine and warm milk and mash thoroughly.
You can add curry powder or peanut butter, both are delicious. Serve with stew.

ps don't forget to peels the bananas

That recipe sounds good. I remember my grandfather ate bananas sliced in milk with sugar. I still like them that way. I suppose living in Central PA at the turn of the century bananas were something kind of exotic. In his later years he had one every day. He lived to 96, maybe there's something to that.
