Chicken with lemon & black olives
3 tbsp olive oil, 4 chicken fillets75 g black olives (sliced), 1 cube chicken-stock, 3 dl water, 1 lemon sliced into 6, 1 tbsp finely chopped oregano, 1 tbsp finely chopped parsley, 25 g butter, 1 tbsp honey, salt & pepper.
Fry the fillets in the oil on both sides until they take on a little colour. Add the olives, lemon, water, cube and oregano. Bring to the boil and reduce the heat. Cover and leave to simmer for 15-20 minutes. Remove the lid and reduce the liquid to half. Add parsley, butter & honey. Season to taste.
I usually serve this dish with pasta tricolore & a green salad.
